Tailgating Dishes with ICON Meals: Part 1: Buffalo Chicken Fiesta Nachos

First up: Buffalo Chicken Fiesta Nachos! These nachos are packed with flavor and are sure to be a hit with your friends and family.

These Buffalo Chicken Fiesta Nachos are the perfect tailgating food! They're packed with flavor and easy to make, thanks to ICON Meals' bulk menu chicken.

Start by preheating your oven to 400 degrees F. In a bowl, combine the chicken and Buffalo sauce. Toss to coat.

Spread a layer of tortilla chips on a baking sheet. Sprinkle with a layer of cheese, followed by a layer of chicken. Top with peppers and onions, then black beans. Repeat layers, ending with a layer of cheese.

Bake for 5-7 minutes, or until cheese is melted and bubbly. Serve with sour cream and enjoy!

Ingredients:

  • 1 pound of chicken from ICON Meals bulk menu
  • 1/2 cup of Buffalo sauce
  • 1 bag of corn tortilla chips
  • 1 cup of shredded Pepper Jack cheese
  • 1/2 cup of cooked diced peppers and onions
  • 1/2 cup of black beans
  • Sour cream, for garnish

Instructions:

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. In a bowl, combine chicken and Buffalo sauce. Toss to coat.
  3. Spread a layer of tortilla chips on a baking sheet.
  4. Sprinkle with a layer of cheese, followed by a layer of chicken.
  5. Top with peppers and onions, then black beans.
  6. Repeat layers, ending with a layer of cheese.
  7. Bake for 5-7 minutes, or until cheese is melted and bubbly.
  8. Serve with sour cream and enjoy!

Tips:

  • For extra flavor, add a drizzle of your favorite hot sauce to the nachos before serving.
  • If you don't have a baking sheet, you can assemble the nachos in a cast iron skillet or other oven-safe dish.
  • To make the nachos ahead of time, simply assemble them as directed but do not bake. Store in the refrigerator until ready to serve. When ready to bake, preheat oven to 400 degrees F (200 degrees C) and bake for 5-7 minutes, or until cheese is melted and bubbly.
